When we redesigned our regional restaurant in Munzingen near Freiburg, it was important to head chef Oliver Rausch and sous chef Christian Koch to stay down-to-earth instead of reaching for the stars. The focus is therefore on unpretentious cuisine made from food and products from partners and suppliers we trust around Munzingen. In short: Baden and Black Forest products are processed into fine dishes. For the highest quality and rich enjoyment! Look forward to classics such as "Baked Weck", Käsespätzle or boiled beef with seafood sauce. Even sweet tongues get their money's worth with us: Lukewarm cheesecake or the braised apple with caramel sauce are among the highlights of our dessert menu.

Oliver Rausch never understood the star hype, which is why he never deviated from his kitchen philosophy of regionality and sustainability in the s Herrehus restaurant despite a Michelin star. With the redesign of the restaurant in Munzingen, he would like to make an unmistakable statement: "The name says it all - guests now know exactly what to expect and awards only confirm what we have always known. High quality, creativity and fine enjoyment are not part of the equation in contradiction with regionality and local reference - quite the opposite: Our dishes are particularly fresh thanks to the many foods that we obtain from producers in the immediate vicinity, "says the chef.
